1 pound Italian sausage
Boil for about 15 minutes - then skin and cut up. Add to vegetables listed below as they are about done browning.
1 large onion, chopped
2 tsp. chopped fresh garlic
1 cup sliced or grated carrots (2 carrots)
1 medium green pepper, chopped
(Optional - 1 ½ cups sliced zucchini, added last) - excellent
Brown these 4 things in the bottom of your big soup pot, with a cube of margarine.
Add:
5 cups of water
5 teaspoons of beef bouillon, or 5 cubes bouillon)
1 (16 oz) can chopped Italian Style stewed tomatoes (chop up)
16 ounces tomato sauce
Rinse all the cans out with water (not full cans of water) and add to soup
2 tsp. Basil
2 tsp. Oregano
2 Tbsp. Parsley
Salt and pepper to taste
Boil all of this for about 15 minutes, and then add:
4 c. four-cheese tortellini (19 oz. frozen bag)
Simmer until tortellini is done - another 5-7 minutes or so. The tortellini will cook fast and you do not want to overcook it.
Top each serving with grated parmesan cheese.
