Salsa Chicken

2 lbs. boneless, skinless chicken breast
2 T. taco seasoning
1 small can diced tomatoes (I used Rotel)
1 chopped onion
1/2 c. finely diced celery
1/2 c. shredded carrot
1 c. salsa (I used Rotel)

[When I made this it wasn't salty or spicy enough for me, so I would add:

2 chicken boullion cubes
1 T. chopped garlic
1 T. cumin]

Place all in crock pot and cook on low for 6-8 hours. Serve with corn tortillas, cheese, sour cream, etc. Black beans would be good too. I fried the tortillas in oil and folded them over like taco shells. The meat mixture is a little wet, just drain it!

Monster Cookies

1 dozen eggs
2 lb. brown sugar
4 c. white sugar
1 lb. margarine
1 T. vanilla
8 t. baking soda
3 lb. chunky peanut butter
18 c. oatmeal
1 lb. chocolate chips
1 lb. m&m's

Use a very big bowl to mix together. Drop by ice cream scoop onto lightly sprayed cookie sheet. You;ll have about  cookies per sheet. Smash down to flatten. Bake approximately 15-20 minutes. Feed the monsters.

Naomi's Ice Cream Pie

Melt:
1 c. baking chips (chocolate, butterscotch, peanut butter, etc.)
1 stick butter
Reserve 3 T. of this sauce

Pour remaining sauce over 2 c. Rice Krispies.Mold into bottom and side of an 8" pie plate and freeze about 15 minutes.

Fill hardened crust with softened ice cream-almost a whole half gallon will fit. Mound it high in the middle.

Mix reserved 3 T. sauce with 1 T. Karo. Drizzle over top of ice cream pie. Freeze until very hard- 24 hours is best.

Use butterscotch chips with pralines and cream ice cream;
semi sweet chips with chocolate chip mint ice cream;
milk chocolate chips with cookie dough or cookies and cream ice cream;
white chocolate chips with rasberry or cherry ice cream

Evelyn's Poppy Seed Bread

3 c. flour
1-1/2 t. salt
1-1/2 t. baking powder
3 eggs
1-1/2 c. milk
1-1/8 c. oil
1-1/4 c. sugar
3 t. poppy seeds
1-1/2 t. butter flavoring
1-1/2 t. vanilla
1-1/2 t. almond flavoring

Mix together. grease and lightly flour 2 loaf pans.

Bake at 350 for 1 hour, checking so you don't overcook. Pour icing over bread while it is still in the pan.

Icing:
1/4 c. orange juice
3/4 c. sugar
1 t. each of vanilla and butter and almond flavorings
Heat a little in microwave and then pour over warm bread.

Jamie's Blueberry Cheesecake Dessert

1-3/4 pkg. graham crackers, crushed
3/4 c. margarine, melted
Mix together and use 1/2 half to make a crust in a 9x13 pan.

Mix:
2 oz pkg. cream cheese
3/4 c. sugar

Follow package directions to make:
2 envelopes Dream Whip, do not  add vanilla. Mix prepared Dream Whip with cream cheese mixture.


Layer on top of graham cracker crust in this order:
1/2 cream cheese mixture
1 can blueberry pie filling
1/2 cream cheese mixture
1/2 graham cracker crumbs

Pumpkin Roll

Beat 3 eggs on high for 5 minutes.

Gradually add 1 c. sugar.

Stir in 2/3 c. pumpkin and 1 t. lemon juice.

Add:

3/4 c. flour
1 t. baking powder
2 t. cinnamon
1 t. ginger
1/2 t. salt
1/2 t. nutmeg

Pour into greased and floured cookie sheet. Top with finely chopped walnuts. Bake at 375 for 15 minutes or until a toothpick inserted into cake comes out clean. When done, use a knife to go around the edges to loosen cake. Turn out onto towel. Sprinkle cake with powdered sugar. Starting at one of the narrow ends roll up cake with the towel and let cool.

Filling:

1 c. powdered sugar
6 oz. cream cheese
4 T. butter
1/2 t. vanilla

Beat until smooth. Unroll cake, spread with filling, re-roll, and chill.

Dana's Muddy Buddies

9 c. Chex cereal
1 c. chocolate chips
1/2 c. peanut butter
1/4 c. butter
1 t. vanilla
1-1/2 c. powdered sugar

 In large bowl, measure cereal; set aside.

In 1-quart microwavable bowl, microwave chocolate chips, peanut butter and butter uncovered on high 1 minute; stir. Microwave about 30 seconds longer or until mixture can be stirred smooth. Stir in vanilla. Pour mixture over cereal, stirring until evenly coated. Pour into 2-gallon resealable food-storage plastic bag or large container.

Add powdered sugar. Seal bag; shake or stir until well coated. Spread on waxed paper to cool. Store in airtight container in refrigerator.
